Modern Kaiseki
The season’s finest rather than specialty dishes

Our deepest apologies to any guest who came expecting to be served the house specialty. Hougetsu has chosen not to create signature dishes. Instead, we pour our efforts into creating monthly menus based on the finest seasonal ingredients in pursuit of true seasonality.

We choose the freshest ingredients from nearby Suruga and Sagami Bays and the mountain bounties of Hakone Seiroku, and will search all corners of Japan and the world in pursuit of what is currently in season. The motto of our head chef is “Ingredients have a here and now.”

We are quite proud of the fact that in our many years of business, we have never repeated a menu. Hougetu offers a modern kaiseki style that is not strictly wedded to Japanese, but brings in Western, Chinese and ethic elements as needed.

open-air-baths
